all-purpose flour

caster sugar

1 tsp

salt

instant dry yeast

120 ml

water

60 ml

milk

30+105 g

butter

light brown sugar

Step by step

  1. Attach the Sifter + Scale attachment to the stand mixer. Sift the flour into the bowl.

  2. Add the caster sugar, salt and yeast to the bowl.

  3. Put the water, milk and smallest amount of butter in the microwave until the butter has melted.

  4. Attach the Dough Hook to the stand mixer.

  5. Pour the milk mixture in the flour mixture and turn the Speed Control Lever to 4. Mix for 4 minutes.

  6. Bring speed up to 6 and mixer another 3 minutes.

  7. Add the egg and mix 1 extra minute.

  8. Pour the dough over a floured surface and knead one minute by hand. Let rest in a warm place for 10 minutes.

  9. Attach the Flex Edge Beater to the stand mixer and mix the remaining butter, light brown sugar and cinnamon on speed 4 until smooth.

  10. Roll out the dough into a rectangle, trim edges if necessary. Spread the sugar mixture over the entire dough.

  11. Roll up the dough and cut into wide slices. Place into a greased baking tin. Let rise for one hour.

  12. Bake for 25 minutes in 170°C preheated oven.
