Melon, pomegranate and feta salad

medium cantaloupe melon
100 g
feta cheese cubed
25 g
fresh basil
50 g
pomegranate berries
1 tsp
pink peppercorns

extra virgin olive oil
pinch
table salt
Step by step
Peel the melon, split it in two halves and clean from seeds by using a tablespoon, then cut the halves into wedges.
Attach the Food processor to the KitchenAid Stand Mixer with the Reversible Shredding Disc inserted.
Place a bowl beneath the attachment and then turn Speed Control Lever to 4.
Insert the wedges, one by one, into the Food Processor feed tube and press gently with the food pusher.
In a small bowl combine the cubed feta cheese, the basil leaves, 4 tablespoons of oil, pink peppercorn and a pinch of salt.
Pour the dressing on the shredded melon, add the pomegranate and mix well.
Some sliced Parma ham placed on top of this salad will satisfy all the family with a fancy and tasty meal.
