Ingredients

cooked red beets

2-3

cucumbers chopped in cubes

1/2

red onion, chopped

1

garlic clove, quartered

200 ml

vegetable stock

1 tbsp

red wine vinegar

1 tbsp

olive oil

Step by step

  1. Combine all the ingredients in the blender.

  2. Blend until smooth

  3. Refrigerate for 1 hour

  4. Serve with some goat's cheese mousse (whip some cream and add warm melted fresh goat's cheese. Stir until combined and refrigerate until firm.), diced cucumbers and beet (or other) sprouts.
