Ingredients

cashew nuts

90 ml + more for soaking the cashews

water

1/2 tsp

salt

1 tsp

onion powder

lemon, juice

1 clove

garlic

spinach

Step by step

  1. Soak the cashew nuts in water for at least 2 hours. Drain and rinse them thoroughly.

  2. Place the cashew nuts in a Food Processor fitted with the Multipurpose Blade.

  3. Add 90 ml water, salt, onion powder, lemon juice and garlic. Pulse until the saucy is very smooth.

  4. Peel the sweet potatoes. Attach the Spiralizer Attachment fitted with the Medium Blade to the stand mixer. Spiralize the sweet potatoes on speed 4.

  5. Heat the oil in a large pan over high heat. Add the sweet potatoes and curry powder and toss them until the potatoes become crisp.

  6. Add the spinach and basil leaves. Mix until the spinach wilts. Mix again and serve. Garnish with with some black sesame seeds.
