gouda cheese, edam or cheddar cheese

30 ml

sunflower oil

self-rising flour

Step by step

  1. Cut the zucchinis in quarters.

  2. Attach the Food Processor with the shredding disc on the stand mixer.

  3. Turn the Speed Control Lever to 6 and push the zucchini through the food processor.

  4. Push the Gouda cheese through the food processor. Remove the Food Processor attachment.

  5. In the bowl of the stand mixer, place flour, buttermilk, sunflower oil, eggs and Parmesan cheese.

  6. Attach the Flat Beater. Turn the Speed Control Lever to 2 and mix for one minute.

  7. Transfer the batter to to the bowl with cheese and zucchini and mix till just incorporated. Add chopped spring onions and mix gently.

  8. Coat each muffin cup with a muffin paper. Distribute the muffin batter equally among the cups, filling the cups up completely, above the surface of the muffin tin. Finish off with some grated cheese.

  9. Bake for 25 minutes on 180°C.
