Broccoli stem cream soup
Step by step
Roughly chop the broccoli stems. Peel and cut the onions in chunks. Peel 2 garlic cloves.
Heat the olive oil in over medium heat and add the cut vegetables. Add the stock and let simmer for 20 minutes until the broccoli stems are fork tender.
Transfer the soup to the jug of the K150 blender and add the avocado. Mix on speed 3 until the soup is completely smooth.
Pour into serving bowls and finish with cream, chopped nuts and alternatively other toppings of your choice.
