Whipped feta dip with crunchy breadsticks

Ingredients

Breadsticks

330 g bread flour

4 g instant yeast

180 ml water

60 ml olive oil

30 g butter, melted and cooled

1 g dried oregano

5 g salt

Whipped feta dip

230 g feta cheese

230 g cream cheese, softened

2 tbsp fresh oregano, chopped

2 tbsp fresh basil leaves, chopped

2 tbsp fresh chives, chopped

1 garlic clove, peeled and minced

30 ml olive oil, plus more drizzling

1 large lemon, zest and juice

½ tsp salt

¼ tsp black pepper

Step by step

    Start the breadsticks

  1. To prepare breadsticks, attach bowl and dough hook. Add flour and instant yeast to bowl and mix to combine.

  2. On low speed drizzle in water, olive oil and melted butter. Add oregano and salt.

  3. Turn mixer off and scrape sides of bowl if needed then turn to speed 2 and let knead for 7 minutes. Turn mixer off and remove dough to greased bowl.

  4. Cover and let rise for 1 hour. Preheat oven to 200C.

  5. Punch down dough and divide into 4 quarters with bench scraper. Using bench scraper divide each quarter into 6 pieces, then roll and stretch into long thin breadsticks 10-12 inches long.

  6. Transfer to parchment lined sheet pans. Brush or spritz with water and sprinkle with salt. Bake for 10 minutes or until lightly browned and crunchy.

  7. While breadstick dough is proofing make the feta dip. Attach clean bowl and double flex edge beater to the mixer.

  8. Feta Dip

  9. Add cream cheese and cream on medium speed for 1 minute. Turn mixer off and crumble in feta.

  10. Glide speed knob to low speed and mix until mostly smooth.

  11. Add oregano, basil, chives, olive oil, lemon zest and juice, salt and pepper. Scrape into serving bowl and drizzle with olive oil. Serve with crunchy breadsticks.

  12. Goat cheese can be used in place of the feta for a more mild dip.
