Homemade mint pea soup
peas (fresh or frozen)
culinary cream, olive oil, pistachios, mint
Step by step
Heat the butter and olive oil in a pan over low heat.
Peel and chop the onion, add to the pan and cook until golden brown.
Add the peas, vegetable stock and mint to the soup and let simmer for 5 minutes.
Transfer to the jug of the Cordless Hand Blender and mix until smooth.
Garnish the soup with the toppings.
