This roasted apricot smoothie is a great breakfast or afternoon snack.

Ingredients

5 apricots

1 nectarine

150 g mango, frozen

300 ml milk

Step by step

  1. Cut the apricots and nectarine in half and discard the pits.

  2. Arrange on the baking tray lined with parchment paper and bake for 25 minutes in a 180ºC preheated oven.

  3. Pour the milk into the jug of the blender.

  4. Add the roasted fruit and frozen mango.

  5. Mix on speed 7 for 30 seconds until smooth. Serve immediately.
