Zucchini fries

Don't throw away your stale bread, instead turn them into homemade breadcrumbs and make zucchini fries with them.

Step by step

  1. To make breadcrumbs, you can use stale bread or fresh bread slices. To dry the bread completely, place the slices on a baking tray and put in a 100°C preheated oven for 15 minutes. Turn and let bake for 15 more minutes. If you're using fresh bread, add another turn and additional 15 minutes. Take the bread out of the oven and let cool for 10 minutes.

  2. Place the bread in the Cordless Chopper. Turn to speed 2 and pulse 10-15 times until fine crumbs form.

  3. Place the bread crumbs in a deep dish. Add flour, parmesan cheese, garlic powder, herbs de provence and salt. Mix everything together.

  4. Wash and cut the zucchinis into fries.

  5. Beat the egg whites until frothy. Brush the parchment paper with olive oil.

  6. To make the fries, dip each zucchini piece first in the beaten egg whites and then in the breadcrumb mixture. Place on the baking tray.

  7. Bake the fries in a 230°C preheated oven for 10 minutes. Turn them and bake another 10 minutes. Serve immediately.
