    pasta flour

    Step by step

    1. Put the flour and salt into the bowl of the mixer fitted with the Flat Beater. Add the eggs and start beating on speed 2. If you want thinner dough, change speed to 3.

    2. Mix until the dough begins to come together into a ball.

    3. Replace the Flat Beater with the Dough Hook. Knead the dough on speed 2 for 4 minutes.

    4. Knead the dough by hand for 1 minute. Cover with cling film and regfrigerate for 30 minutes. Then divide the dough into 4 equal parts.

    5. Attach the Pasta Sheet Roller to the stand mixer. Set the thickness to 1.

    6. On speed 2, make the dough more pliable by rolling it several times.

    7. Next turn the thickness to 2, repeat the last step.

    8. Attach the Spaghetti Roller and on speed 2, feed the pasta to the roller.

    9. Dry on rack. Cook in heavily salted boiling water for 3-5 minutes.
