Key lime pie with condensed milk

Delicious, zesty lime pie - trust us, you will not want to stop at just one slice!






190 g

digestive biscuits

6 tbsp

butter, melted and cooled

3 tbsp

caster sugar

400 ml

sweetened condensed milk


egg yolks

330 ml

fresh lime juice

Step by step

  1. Break the biscuits into large chucks and add them to the Food Processor.

  2. Add the sugar and the melted butter.

  3. Mix on speed 1 until all the ingredients are combined.

  4. Spread the mixture in a baking tin and press firmly down with the back of a spoon or a glass.

  5. Bake for 10 minutes in a 190ºC oven until golden brown. Let cool in the oven.

  6. In a bowl, gently mix together the condensed milk, egg yolks and lime juice.

  7. Pour into the cooled crust and even out the surface with a spatula.

  8. Bake for 15 minutes in a 160ºC oven until the custard is firm. Let completely cool before serving.

  9. Finish off the pie with a lime zest.
