gelatine sheets

120 g

golden syrup

340 g

caster sugar

180 ml + more for soaking the gelatine sheets

Step by step

  1. Soak the gelatine sheets in cold water.

  2. Put the golden syrup, sugar and water into a large saucepan over medium heat. Bring the sugar to a soft boil and cook for 5 minutes. Do not stir.

  3. Put the egg whites in the bowl of a stand mixer fitted with the Wire Whip. Mix for 1 minute on speed 10 until peaks form.

  4. With the mixer running, slowly stream in the sugar syrup in the side of the bowl.

  5. Squeeze out the gelatine and add them to the egg whites and sugar mixture. Add the vanilla extract.

  6. Whip on speed 10 until the marshmallow mixture are thick and glossy.

  7. Mix together icing sugar and cornstarch. Line a baking tray with baking paper and dust over a generous amount of the icing sugar mixture. This is to prevent the marshmallow from sticking.

  8. Pour in the marshmallow mixture, sprinkle the icing sugar mixture over it and let sit at room temperature overnight. Sprinkle a sharp knife with cornstarch before cutting the marshmallow into desired shape and size.
