Molten lava cakes
A tiny but mighty cake that has a rich molten chocolate inside.

butter

dark chocolate

egg yolks

caster sugar
40 g
all-purpose flour
1/4 tsp

Step by step
Melt the butter and chocolate over a double boiler, set aside to cool slightly. Place the eggs, egg yolks and caster sugar in the bowl of a Stand Mixer fitted with the Wire Whisk. Mix on speed 4 until thick and foamy.
Add the flour and salt and incorporate on speed 2. Slowly stream in the melted chocolate.
Grease and lightly dust 4 baking tins with flour. Divide the batter over the baking tins.
Bake for 12 minutes at 215°C. Let rest for 3 minutes before turning onto a plate.
Serve with ice cream.
