A tiny but mighty cake that has a rich molten chocolate inside.

dark chocolate

egg yolks

caster sugar

all-purpose flour

Step by step

  1. Melt the butter and chocolate over a double boiler, set aside to cool slightly. Place the eggs, egg yolks and caster sugar in the bowl of a Stand Mixer fitted with the Wire Whisk. Mix on speed 4 until thick and foamy.

  2. Add the flour and salt and incorporate on speed 2. Slowly stream in the melted chocolate.

  3. Grease and lightly dust 4 baking tins with flour. Divide the batter over the baking tins.

  4. Bake for 12 minutes at 215°C. Let rest for 3 minutes before turning onto a plate.

  5. Serve with ice cream.
