Olive oil thyme cake
Step by step
Add the caster sugar and the thyme leaves and lemon zest to the bowl of a stand mixer fitted with the Paddle Attachment. Mix on speed 2 until the sugar reaches the consistency of wet sand. Add the eggs and mix until incorporated.
Add the olive and milk and mix until fully incorporated.
Lower the speed to 1 and add the flour, salt, baking soda and baking powder. Mix until the dry ingredients have just combined with the wet ingredients. Pour the batter into a lined cake tin and bake for 40 minutes in a 175°C preheated oven until a skewer comes out dry.
