Step by step

  1. Add the caster sugar and the thyme leaves and lemon zest to the bowl of a stand mixer fitted with the Paddle Attachment. Mix on speed 2 until the sugar reaches the consistency of wet sand. Add the eggs and mix until incorporated.

  2. Add the olive and milk and mix until fully incorporated.

  3. Lower the speed to 1 and add the flour, salt, baking soda and baking powder. Mix until the dry ingredients have just combined with the wet ingredients. Pour the batter into a lined cake tin and bake for 40 minutes in a 175°C preheated oven until a skewer comes out dry.
