Step by step
Separate the eggs and place the egg whites and caster sugar into the bowl of a stand mixer fitted with the Mixer Whisk. Mix on speed 10 until peaks form.
Lower the speed to 4 and add the oil, egg yolks and zest of 2 oranges. Mix until combined. Lower the speed to 1 and add the flour, almond flour and orange juice until the batter has just come together.
Pour into a greased cake tin and bake for 40 minutes on 180°C until a skewer comes out dry.
