Pain aux graines

This hearty bread packed with seeds is full of flavor yet so simple to prepare.






12 g

instant yeast

360 ml

warm water at 35°C

350 g

white bread flour

180 g

wholewheat flour

1,5 tsp


50 g

sunflower seeds

50 g

sesame seeds

50 g

poppy seeds

Step by step

  1. Add warm water and yeast to a bowl and let it sit for 10 minutes.

  2. Place the flours and salt to the bowl of a stand mixer fitted with Dough Hook. Set 1 tablespoon of mixed seeds aside to top the bread and add the rest to the bowl.

  3. Start mixing on speed 2 and add the yeast water. Knead the bread on speed 2 for 10 minutes. Line a loaf pan with parchment paper. Place the dough in the loaf pan. Brush the top with a bit of water and sprinkle the seeds on top of the dough. Cover the loaf pan with a kitchen towel and let rise in a warm place for about 90 minutes.

  4. Preheat the oven to 180°C. Place a bowl of water on the lower oven rack to help the crust develop. Place the loaf pan in the oven and bake for about 40-45 minutes. Cool off before slicing and serving.
