Soba noodles

You will never want the store bought soba noodles after you made these yourself!

buckwheat flour

110 g + extra for dusting

Step by step

  1. Place both types of flour in the bowl of a stand mixer fitted with Paddle Attachment. Turn to speed 1 and slowly add water till crumbly dough forms. Fit the stand mixer with the Dough Hook and knead for 1 minute or until the dough is smooth. If the dough is too tough, add an additional tbsp of water. If the dough doesn't hold together, you may add additional flour, per tbsp.

  2. Attach KitchenAid Pasta Roller attachment with adjustment knob set to 1 to mixer. Divide dough into 8 pieces and flatten each piece. Turn mixer to speed 2 and feed flattened dough through rollers to knead. Lightly dust dough sheets with flour, cover and set aside. Attach the Spaghetti Cutter attachment and feed the dough sheets to cut soba noodles. Place the soba noodles on a large plate and continue till all dough sheets are used.

  3. Bring a large pot of salted water to a boil. Fill a large bowl with water and ice to cool cooked noodles in. Drop noodles gently into boiling water and stir with a slotted spoon to separate. Cook for 1 minute. Scoop out with a spoon and plunge into ice water. Remove from ice water and set aside. Repeat with remaining noodles.
