Homemade soft pretzel

Step by step
Put the water, yeast, salt, brown sugar and melted butter into the bowl of a stand mixer.
Attach the Dough Hook to the stand mixer and add 1/3 of the flour. Start mixing on speed 2.
Add the rest of the flour gradually.
The dough is ready when you poke it with your finger and it bounces back.
Turn the dough onto a floured surface, knead by hand for 3 minutes and shape into a ball.
Cover with a towel and let rest for 10 minutes.
Meanwhile, preheat the oven on 200°C and bring the water almost to a boil.
Cut the dough in pieces of 50 g. Roll the dough in a rope. Take the ends and draw them together so the dough forms a cirkle. Twist the ends, then bring them towards yourself and press them down in a pretzel shape.
Add the baking soda to the water. Drop the pretzel in the water for about 20 seconds, remove them with a slotted spoon and put it on a lined baking sheet.
Sprinkle the pretzels with coarse sea salt and bake 12-15 minutes until golden brown.
