This recipe combines fresh seasonal produce with crunchy nuts and creamy burrata.

Step by step

  1. Attach the Fresh Prep Slicer/Shredder Attachment fitted with the Slicing Blade onto the stand mixer. Slice the mini cucumbers and courgettes on speed 4.

  2. Fit the Fresh Prep Slicer/Shredder Attachment with the Coarse Shredding Blade and crush the pistachios on speed 4.

  3. Cut the baby gem lettuce lenghtwise and arrange all the vegetables on a salad platter. Add the burrata. Finish off with grating fresh lemon zest, crushed pistachios and drizzle with some olive oil.

  4. Serving tip: serve with bread and a dressing of your choice.
