Strawberry soup with fresh pineapple and coconut milk

Prepare the fruit as described und put directly into the KitchenAid Artisan Blender pitcher.   Add the orange juice, coconut milk and sugar. Blend on speed 5 liquify for about 20 seconds until completely smooth. Chill for several hours to develop flavor.

  • ¼ ofa ripe pineapple, about 300g peeled, cored and cut into chunks
  • juice from 2oranges, freshly squeezed
  • 200 mlcoconut milk
  • 3 tbspsugar
  • -garnish
  • -fresh mint
  • -fresh basil
  • -greek yoghurt
  • a fewfresh strawberries

    To make the garnish, finely chop the herbs and stir into the yoghurt.

    Serve soup well chilled with a dollop of herb-yoghurt and some sliced strawberries on top. Enjoy!
