A hearty soup with lots of fresh vegetables and zesty lemon. Serve with naan for a light dinner.

cooked red lentils

Step by step

  1. Peel the onions, sweet potato and carrots.

  2. Fit the Food Processor with the Dicing Disk and turn the speed to 1. Add the onions, sweet potato, zucchini and carrots through the Feed Tube to dice.

  3. Heat the olive oil over medium heat and add the diced vegetables, fry for 5 minutes.

  4. Add the garlic cloves, ground spices, canned tomatoes, preserved lemon, vegetable stock and lentils. Cover the pot with the lid and let simmer for 30 minutes.
