This simple to make apple sponge cake is light and fluffy, and filled with juicy apple chunks!

caster sugar

all purpose flour, sifted

granny smith apples (or other sour apples)

70 g

walnuts, chopped

1 tbsp

cinnamon

whipping cream

icing sugar

Step by step

  1. Wash, peel and core the apples. Cut them into eights. Juice half a lemon and toss the apples in the lemon juice and cinnamon.

  2. Place the eggs in the bowl of the stand mixer fitted with Wire Whisk. Turn to speed 6 and whip the eggs until fluffy for about 2 minutes. Gradually add the sugar. Once all the sugar is incorporated, reduce the speed to 2, and gradually add the flour. Mix as briefly as needed to incorporate the flour.

  3. Line a 30x40 cm baking tin with parchment paper. Pour the batter into the baking tin and spread evenly. Stick the apples into the batter, making sure they are equally distributed. Sprinkle with the chopped walnuts. Bake in a 180°C preheated oven for about 40 minutes in the oven. Sprinkle the cake with icing sugar (optional). Serve with whipped cream.
